Herbs must not be dried at too high a temperature, a good temperature is slightly below 30 degrees. Herbs are dry enough when you can easily crush the leaves and stems. Dried herbs can easily be stored in old glass spice jars. Wash the jars carefully before reuse, so that the smells and tastes of the previous spices don’t remain in them.
