Drying tomatoes in a food dehydrator

What's better in a salad than sun-dried tomatoes! Market's ready-made sun-dried tomatoes are of course good, but they often have a slightly industrial aftertaste. Sun-dried tomatoes are very easy to prepare even without the sun by drying cherry tomatoes and storing them in a glass jar.

Sun-dried tomatoes are very easy to prepare even without the sun by drying cherry tomatoes and storing them in a glass jar. Sun-dried tomatoes can also be made from larger tomatoes, but the drying time is then a couple of days, while for cherry tomatoes, split 8-10 hours. This is also a good way to get a long shelf life for the tomatoes!
 
Instructions for making sun-dried tomatoes:
 
1.     Wash the cherry tomatoes and dry them.
2.     Cut the cherry tomatoes in half and place them side by side on a drying rack. Sprinkle salt on top.
3.     Leave to dry in a food dehydrator at 55 degrees for 8-10 hours, until they are dry, but still a little juicy and supple inside.
4.     Place the cherry tomatoes in a glass jar and add olive oil, vinegar and any other spices or herbs you like, such as garlic, basil or oregano.
5.     Tomatoes will keep in the fridge for 6 months and the flavors only get stronger in the first few weeks!
 
Dried tomatoes are also suitable for a diet where you want to prefer light foods, and drying in a food dehydrator also preserves all the vitamins, antioxidants and fibers of the tomatoes. The red color of tomatoes is given by an antioxidant called lycopene, which strengthens the immune system.
Dried cherry tomatoes can be used, for example, in salads, on bread or between patong and with pasta, really only imagination is the limit.
 
So at the beginning of summer, it's a great time to grow tomatoes and store them dried for the winter as well!
